Although dandelions are common plants, the honey sourced from their bright yellow flowers is quite rare. Early in the flowering season the honey is a vibrant gold colour; later batches are amber. The aroma of dandelion honey is a little ammoniacal, but if you can overcome that, the flavour is good.
