There are several varieties of goldenrod, so this American honey varies from state to state. It is unusual in that it is produced in the autumn, when there are not too many flowering plants around. Unripe goldenrod honey has an unpleasant smell that has been likened to that of rotting meat. This dissipates once the bees have finished their work but the ripened honey has a distinctive spicy flavour that is not to everyon'es taste. Goldenrod honey is widely used by commercial bakers.
