Gallberry Honey

The tiny white blossoms of the wild gallberry, a member of the holly family, bloom for quite a short season, so the honey is much sought after by fans of its flowerly flavour. The colour is pale amber with a yellowish tinge. Gallberry honey remains liquid, even at low temperatures, and is noted for its aromatic aftertaste.
