It is surprisingly easy to replace dairy products and eggs, and there is an ever-growing variety of foods on the market to enable you to do so. You can make quiches using tofu, whisk cream using soya milk, and set jellies using agar-agar. You can even eat a full cooked breakfast using soya sausages, scrambled tofu on toast, grilled tomatoes and "rashers" that look and taste exactly like bacon but are in fact made from vegetables. Very often, even non-vegans do not notice the difference.
