Possibly the best-known variety of honey in the world, heather honey has a jelly-like consistency, even in the comb, which makes extraction difficult. The methos used by most beekeepers is pressing, which is both time-consuming and messy, but heather honey has such a marvellous flavour that the effort is generally agreed to be well worthwhile. The best heather honey comes from Scotland. Depending on the source, it ranges in colour from golden, almost orange, through to a rich port-wine shade ( bell heather honey). It has a delicious flowery taste, sometimes with a light smokiness. As with a good red wine, the flavour of heather honey is said to improve with keeping.
