All these types of honey come from trees that are members of the same family, Tilia. The common British variety, often seedn in public gardens, is Tilia europaea. In Europe the same tree is called linden, while an American species is known as the basswood. Whatever the tree is called, the honey is superb. The colour – water white to pale yellow, with a greenish tinge – is not particularly exciting, but the aroma is lovely. The flavour has been likened to that of green apples with a touch of mint, and it has a definite aftertaste. Lime honey is slow to granulate.
