Raw Food ‘Oh Yeah’ Trail Mix Balls
Imagine a snack that is tasty, sweet and good for you! Its possible and easy! This no frills recipe is not only healthy its easy to pack and go. This recipe takes no time to put together and the benefits from the raw ingredients will give you energy for long periods of time. Now seriously, who doesn't love a good crunchy, squishy, gooey goodness snack any ol' time of the day!?
I was so jazzed about this recipe, I purchased a Cuisinart food processor so that I could quickly chop, blend and mix this recipe in no time flat Its still an easy recipe even if you dont have a food processor. Really, who are we kidding, I was looking for a good escuse to finally buy a good mixer. I have wanted one for years! So, no worries on how you get this recipe blended up, just have fun and enjoy the wonderful goodness that you create!
Trail Mix Balls
1/4 cup raisins
4 dates
5 figs
6 apricots
1/4 cup sunflower seeds
Coconut flakes or whole sunflower seeds for rolling
These measurements are just a start, if you want more just add more. The consistency can be whatever you like in amounts just know that you will need more raisins for sure for the "glue".
1. Pulse the sunflower seeds in the food processor until they are coarsely chopped.
2. Add the dried fruit. Blend until everything is thoroughly mixed, and roll the resulting dough into balls.
3. Roll the balls in coconut or whole sunflower seeds.
( I ground up my coconut flakes and just added them into the mixture. Also, if you find you need the balls to stick better, I used some Wildflower/Black honey into the mix to get it stickier)
