Tupelo Honey
The tupelo or pepperidge tree is native to eastern North America and also grows in southern Asia. In northern Florida hives are kept on platforms along the river swamps. Tupelo honey is golden in colour, with a greenish cast. It is much sought after because of its lovely floral perfume and complex, somewhat fruity flavour and aftertaste. The honey has such a high ratio of fructose to glucose that it is very slow to crystallize.
